New research finds that when foods rich in carbohydrates—especially starchy foods like potatoes—are increased it also raises the risk of breast cancer returning, when compared to women who decreased the amount consumed.
Previous studies have found a link between the risk of breast cancer and a diet high in carbs; however, this is the first in which starchy foods were analyzed.
The exact cause was not determined in the study, although researchers suggest that insulin levels are increased with starchy foods. Higher levels of insulin have been linked to breast cancer tumor growth.
Additionally, starchy foods could increase weight. Previous studies have also linked obesity to the risk of breast cancer.
While new dietary recommendations won’t be made based on these findings, it does draw attention to the need for healthier diets overall.
